When pressure canning, it is imortant to know which size jars you need for your recipes. Pint sized jars are more commonly called for, and require much less time in a pressure canner than the also popular quart jars. When you open preserved food in a pint jar, it is easier to use the entire jar up before it spoils than with a quart jar.
Although you will need twice as many pint jars than you will for the same amount of preserved product, it is often to your benefit to go with the smaller sized jars.
Wide mouth mason jars are more popular than regular sized since they are actually much easier to clean, and it is easier to get all of your canned good out of them due to the significantly larger opening. If you are buying mason jars for the first time, it is best to go with all wide mouth jars for these reasons.

These larger jars are useful for canned goods with a very long shelf like, such as pickles or sour kraut - or for a foodstuff that is needed in larger quantities when the jar is opened, such as tomato sauce. They will often require a longer time to process, especially in a pressure canner.
Use wide mouth jars when canning the biggest foods, such as dill pickles and whole canned tomatoes. I don't recommend using quart sized jars for food that is eaten slowly or goes bad quickly - such as canned meats or low acid fruits and vegetables.
Make sure your canner is capable of processing quart sized jars before you buy these! Smaller water bath or pressure canners will not take larger quart sized jars. If you have a small canner, use pint jars instead.
Standard mason jar lids cannot be reused, and must bought again every time you have a canning day - that's where these new Tattler lids come in! Tattler has created a plastic and rubber lid combination that can be used again and again. Although they are more expensive per lid, the savings over a lifetime can be enormous!
Make sure to buy the right sized lid for your mason jar collection, this entry is for the regular sized reusable lid.
These Tattler lids are great to use over and over again - but it is still best to use disposable lids if you are selling canned goods or giving canned goods away to someone who you know will not return your jars back to you.
Wide mouth tattler lids are only a few cents more than the standard sized, but you will thank me later if you take my recommendation to use wide mouth mason jars instead of the smaller mouth jars.
